How do protetsants defend the Canon of the NT

when it was the bishops of the Catholic Church under the guidance of the Holy Ghost that established the Canon.

I’m curious what the typical protestant response is to this point.
 
Usually with some non-sense that goes something like “The scripture was scripture the moment it was written, long before Constantine created the Catholic Church.”

or

Sometimes they will proof-text verses like 2 Timothy 3:16-17 without regard for context.
