The CCC states:

Since it belongs to the supernatural order, grace escapes our experience and cannot be known except by faith.

What is meant by this, and wouldn’t not being conscious of any mortal sin be an “experience” of grace? (since mortal sin is the way grace is lost)

It means that God’s grace is far above and beyond our natural human senses. We access it by faith, which is a gift of God, and the faculty by which we can connect to the supernatural.

Any questions about God’s are answered in Saint Paul’s epistle to the Romans. What a magnificent revelation of God’s grace.

We should know the world by reason and from the world we should ascend to God as to its source. That is the mystery of the elevation of our nature by grace.

It’s saying you won’t notice grace has happened it’s supernatural and won’t be felt as such.

The grace itself may not be noticed but the effects of grace can be experienced. Praying for greater faith and it being given can be experienced if you do indeed have greater faith as a result, but you would probably not experience the grace which promoted it.
