How does one defend and explain the real presence?

I’ve got a daughter that went off to university this fall and has been involved in non-denominational bible studies. now she is questioning if we as catholics don’t read John 6 “too literally”.
Do you have any good resources to help me discuss this with her?

In John 6:55 Jesus is very explicit about the Eucharist. If He had been merely speaking symbolically, none of His disciples would have left Him. But in fact, many did. AND He did not go after them, explaining that He was only speaking symbolically (John 6:66). For a look at how the early Church understood the Eucharist, see: catholic.com/library/Real_Presence.asp
