How much credibility should we give to Biblical interpretations from Non-Christians?

Often times, there will be people from different spiritualities, usually a Eastern guru or something that will show scripture verses from the Bible that support their religious doctrines or try to prove that Jesus was esoterically teaching a doctrine from their religion, and us 'ignorant close-minded Christians just don’t want to grasp the true message"

One example is people who believe Christ’s “I am the way, the truth” message was really pointing to his 'Christ consciousness" and not to Christ the person.

Another example is Pauls conversion when he was knocked off his horse in Damascus was him reaching enlightenment and achieving Buddha nature. There are alot more examples.

Anyway, is there a way to prove that these are erroneous and downright false interpretations of the Bible?

Since they interpret the Scripture in contradiction to the Sacred Tradition, then it is of no use to us. The understanding of the Scripture should be from those who produce it, in this case, the Catholic Church.

As a Catholic Apologetics teacher, I just finished a lengthy dialog with a Presbyterian Minister

The issue is not only a difference in what our bibles say; far more confounding is the fact that Protestants are literally unable; blocked by the Holy Spirit from granting them right understanding.

I have seen this many times.

Psst… if someone talks to you about “Paul being knocked off his horse on the road to Damascus”, you might want to encourage him to actually read the text that he’s purporting to quote to you. Paul isn’t riding a horse in the passage in question.

Moreover, the actual text doesn’t just say that Paul was simply knocked to the ground – it says that Jesus Himself spoke to Paul at that point! Now… it’d be really interesting to see how they claim that this event is actually an “achieving enlightenment / Buddha nature” event. Especially since, at that point, Saul was neither near enlightenment nor pursuing it, but rather, was actually seeking out Christians in order to imprison and kill them. Is that what Buddha does? Is that how enlightenment happens – arbitrarily and without cause?
