A History of Philosophy by Frederick Charles Copleston, SJ.
While it isn’t a course per se, she can purchase the books individually and read up on the schools of philosophy that interest her. This would help her with her studies. It doesn’t cover developments in the last 50 years, but there’s plenty of time for that after getting the foundations.
