How to learn proper Ecclesiastical Latin pronunciation?

I bought the Little Office of the BVM and it has Latin next to the English. I think I want to learn to say the Latin.

On Google I’ve found differing guides on ecclesiastical Latin, for example one said ‘o’ is pronounced ‘ah’ and one said it is pronounced as in ‘note’.

Also tips on mastering the pronunciation would be helpful, and a reference to a definitive guide to it that one of you knows to be the proper guide.

I trust what Fish Eaters has to say on the subject (although I think I’ve heard and personally do pronounce the “A” in “Æ”). I personally learned through a combination of how I learned to pronounce things in Italian/Spanish and listening to Gregorian chant. I’d highly recommend the latter in terms of learning pronunciation.

There are more than one good sources on YouTube. I enjoy this one. He more videos but this is his first one.

 
I recommend that you listen extensively to Gregorian chants and also prayers of the Rosary to internalise the sounds and pronunciation.
 
On Youtube Giovanni Vianini with the Schola Gregoriana Mediolanensis often have the text with old notes to look at as they sing. Just a couple to start with… Singing when learning a new language helps a lot with how to pronounce the words and get the feeling for the language like intonation and rhythm.
