I love all Gregorian Chant. 👍 My favorite chant at the moment is Salve Regina, and it is so beautiful to listen and sing to. I came across this order of Benedictine Nuns a couple of weeks ago, and I thought I’d share the link. 🙂 This link has some of the chants they chant throughout the year, and they are so beautiful to listen to. stceciliasabbey.org.uk/site.php?menuaccess=20
 
It’s awfully hard to come up with an answer. The abbey I’m associated with uses Gregorian chant daily in the liturgy (Mass, Liturgy of the Hours), so I’m pretty familiar with most of the repertory.

The Holy Week hymns for the Divine Office and the Good Friday service can bring tears to my eyes though (Gloria Laus, for the entrance procession on Palm Sunday; Vexilla Regis for Vespers of Holy Week and Sept 14th; Pange Lingua, the original version by Venantius Fortunatus sung at Matins and Lauds during Holy Week which also incorporates Crux Fidelis sung on Good Friday)

Here’s what I’m talking about:

Gloria Laus

Vexilla Regis

Crux Fidelis/Pange Lingua (Fortunatus)

But beyond those, too many to count. Here’s another one, sung at First Friday benediction, Ecce Panis Angelorum, which is the last 4 strophes of the sequence Lauda Sion sung at Mass on Corpus Christi:
