what is different in the original Greek texts that changes “I am” to “I AM”

Not sure what you are referring to in terms of “changes”. With regards to your query, you are talking about the Greek term “Ego Eimi” which means I AM. I AM is the Tetragrammaton, the sacred name for God no Jew would say, in Hebrew YHWH, usually rendered as Yahweh in the NJB, or as LORD in the RSV OT. When Jesus says “I AM” in the NT he is saying He is God. When He is crucified, Pilate writes this above Him INRI in Latin (Iesus Nazerei Rexus Iudem) YHWH in Hebrew. No wonder the Chief priest wanted him to take it down!!
 
Thanks and sorry to have wasted your time, i see now that the poster may have quoted a gospel and converted the “i am” to “I AM” as in exodus.
