I happen to have that very icon–the Mother of God, the Life-giving Fountain. Her feastday is the Friday after Pascha.
Matching it is an icon of Christ the Living Bread, which shows Him issuing from a Chalice.

Not sure I have one favorite, but this one I’ve always found interesting:
Icon of the Healing of the Paralytic. There is another icon like this, except the man is raising his pallet above him like he’s lifting weights. I saw it in an Eastern Christian bulletin, but I have not seen it since.
