Are there 2 “parts” to him (a “God part” and a “Human part”)? Or is he one, but in some way which is going over my head? I know, dumb question, but I couldn’t answer this when it popped into my mind.

After considering the concepts, study the gospels.

He is one Person (one "part). To say Christ is two persons is a heresy called Nestorianism if I’m not mistaken. But Christ has two natures- God and man. You can’t be part God. If you are God, you are all God. And you can’t be part man. If you are man, you are all man. If you aren’t all God, you aren’t God. If you aren’t all man, you aren’t man.

The belief presented in your question was in fact a heresy during the early Church called “Nesotarianism”, which falsely asserted that Jesus was 2 distinct persons.
 
The best way to view it is like our souls and body. You are body and spirit. Does your body dilute the spirit part of you? Does your spirit dilute the body part of you? You are both body and spirit full body, full spirit. So, Christ is God, who did not have a body, joined with a human body with human wants and needs. So, Christ’s God part wouldn’t change anything about his humanity, nor would his humanity change the fact he is God. He is both at once, completely both, and perfectly both.
 
No. This is Nestorianism, to divide Christ in such a way. I do not believe that the Roman Catholic Church teaches that Christ is composed in that way.

Be careful about entertaining these kinds of thoughts. It is not wrong to wonder and ask, but also a great number of soul-destroying heresies have formed due to seemingly innocent thoughts that do the service of Satan. Accept that Christ is fully God and fully man, as defined by the Fathers, and do not go beyond that.
