Why do we still have to die?

We die on earth so that, if we served God’s will on earth, we may enter God’s kingdom and enjoy everlasting life and experience the beatific vision – the experience of physically seeing God face-to-face. Through Christ’s passion, he made a new covenant with his people:

Note that “believe” means to not only say that you believe, but also to show that you believe by serving God in the world and being a member of the Body of Christ. This is why Jesus established the Church and the Sacraments.

Death is one of the consequences of the Fall. So is concupiscence (a tendency toward sin). Once sin came into the world, so did death. We are all born with the stain of Original Sin and still experience the consequences of living in a post-Fall world - e.g. death. Jesus made it possible to be cleansed of that stain of Original Sin (and of any further sins we commit) and opened heaven for us so that death no longer has a hold over us. By dying on the cross, He gave us a chance at eternal life.

Mankind are creatures. Adam and Eve had been given both supernatural and preternatural gifts. They are gifts because they are not natural for a creature. Then they lost them for all of Mankind, by their actions. But Christ freed those in the underworld that were just (not the unjust) when he descended there and taught the Gospel. The rest of us have now got the opportunity to cooperate with the grace of the Holy Spirit and through our final charity, have eternal life, yet this does not restore during our earthly lives, the preternatural gifts that Adam and Eve had, but we have the better supernatural gift of the Holy Spirit. It has been said that Christ paid the ransom to the devil for us. Those with eternal life will be resurrected in the second coming of Christ.

No - even He suffered illness and death.
‘Dying He destroyed our death’ - not by getting rid of it entirely, but by transforming it from a punishment for sin into a chance to enter into something wonderful and glorious - a chance to go to Heaven, not stay on this created, finite planet.
A chance, through suffering in union with Him, to participate in His saving work and so bring others to heaven too.
So He paid the price and left us to enjoy the benefits that come through suffering and dying with Him.

Lastly, death is not to be feared by the believer, because we have the hope of the final resurrection and eternal life with God. For Christians, death is upgrading to first class.

He did pay the full price and now he is gone seated at the right hand of the Father. He has brought us salvation and now it is our chance to grab it up. It is now OUR time to believe that ALL ILLNESS, SADNESS and DEJECTION can be cured by the One who is risen, just as the woman with the haemorrhage.With death comes the end of our body’s desires and the birth of our pure innocent hearts or souls.

The ransom was paid in full, or else we could not have eternal life. We suffer now, later we may be without that suffering. Since what Adam and Eve had was preternatural, not natural, we cannot expect it for ourselves. It was a gift.

New Jerusalem is in heaven. Baltimore Catechism No. 3:
Q. 1391. When will the general resurrection or rising of all the dead take place?

Jesus Christ paid the spiritual price for our sins. This means we don’t go to hell for the sins we have committed that have been forgiven.
We still have to die because we are punished for Adam and Eve’s sin in a temporal way. When they fell, sin and death entered the world.

If by die, you mean die in body, then the answer is simple: Jesus died for our souls, not our flesh. We are souls with bodies, not the other way around and eventually, our bodies will wear out, God never meant them to be permanent.
If by die you mean death of the soul (hell) again, the answer is rather simple. Jesus’ sacrifice gave us the keys to the pearly gates, we can enter if we are worthy and accept Him and His sacrifice. Here’s the thing, we have to actually accept him! If we don’t it’s like a physician giving us medicine and saying “eat this and you won’t croak” the patient can be told an infinite amount of times, but it is his choice ultimately whether or not to take the medicine.
