The laws of the Old Testament have not been done away with. Rather, many of them no longer apply or have been fulfilled through Jesus as stated in the verse above.
Many verses such as those about wearing certain fabrics (Duet. 22:11), a certain haircut (Lev. 19:27), or not eating pig (Lev. 19:27). Were made due to social customs, to keep the israelites from acting like the pagans, or for health reasons. These laws do not apply today because of different social customs or better ways of cooking food or maintaining good health.
Other laws such as “Thou shall not kill” or “Thou shall not commit adultery” still apply today however the consequences are different.
In Jewish times, under the old testament law, people who committed sins such as adultery could face the death penalty.
However, this ruling was rare and when it was put into place they could have an animal take their place (symbolized Jesus.)
An animal was needed since it is the only living thing without sin. However it was still imperfect.
Jesus’ death however fulfilled this requirement. Since Jesus is God and without sin his died for all of our sins and took our place.
Therefore the death penalty or stoning no longer applies. (However there is still one thing- an animal could take the place of a person committing any sin except murder. I am not sure if Jesus’ death would change this as well.)
Anyway, Christians should not pick and choose which laws apply and which Don’t instead the New testament Epistles as well as taking the historical context of the OT laws can show us which laws still apply.
Laws such as the ten commandments still apply since they are relevant to today’s society, however the consequences are different, disobedience to any OT law today leads to the death of the spirit and separates the person from God. This can be forgiven through confession.
