If the pope is infallible in matters of dogma..then what is the point of ecumenical councils?

He wasn’t merely invited. I’ve seen Orthodox Christians argue that his approval / acceptance of a council was no more important than that of any other bishop (or at least patriarch), but I’ve never seen anyone deny that his approval was solicited.
 
i think this would fall under the umbrella of “progressive revelation”? or probably ecclesiastical economy?

from catholic perspective anyway

right. i know how infallibility works. the pope also has to be explicitly speaking “ex cathedra” that is “maybe” “personally sure” and theological speculation doesn’t count
 
No. Progressive revelation is a valid term up to the time of Christ. The Church teaches that after the death of the last Apostle, there was to be no more public revelation. The complete deposit of faith was given to us through the Apostles once and for all… that being said, just like an acorn that grows into a mature tree, the Church’s understanding of this deposit has grown and matured under the guidance of the Holy Spirit.
