There was an actual Bavarian group a few hundred years ago that used that name. They were a secret society, but not all that powerful

Today, the use is more ficitonal. This shadow governement that controls everything in the world that consipacy folks love to talk about. You can find all sorts of things about them on the net. If they did exist and were that powerful why would they let their story be known?

You won’t find much that is reliable. The real Illuminati was a secret group, the ficitonal one is fictional. Both make good fodder for books, movies, and websites.
