Catholics are allowed to baptize if the other is in danger in death. Now, should this person be an adult, are baptized by a Catholic who was with them at the time, and survives- what happens? Do they become Catholic now, even if that never crossed their mind before?

And I know it’s always water, but I’ve heard it mentioned that saliva can be used, if the circumstances are dire enough.
 
anyone, Catholic or not, may baptize a person in danger of death, but that should only be done if the person requests it if an adult, or was known to have that intent, or in the case of a child if it is known to be the parent’s intent. Water must be used and the trinitarian formula. The nearest parish priest is to be notified in any case, and if the person survives, he will complete the rite, and he will also make sure the facts of the baptism are recorded. It is a grave wrong to baptize anyone without their permission, or without the permission of the parents of an infant. Catholic parents are presumed to have that intent to an infant in danger of death.

If it had “never crossed their mind” then you should not baptize them. Adults must have express intent to be baptized.

Yes they become Catholic. The person Baptizing MUST report the Baptism to the local parish for entry into the parish Baptismal register.
  1. Only natural water can be used.
