We went with a tour group from our Diocese (office of the missions); friends went on a tour with Dr. Scott Hahn. Both were packed with sites and the places visited varied. We both thought they were a little rushed, with more time desired at some of the sites. One thing I enjoyed with the group we took was only staying at two places (a hotel in Jerusalem and a convent in Nazareth), but that’s just personal.
I would suggest getting one of the available tour books and reading through it. Then you can look at the various tours to match them with your desires.
