I am Roman Catholic and my husband is Greek Orthodox. We were married in the Greek church. I want to baptize my children in the Catholic church. Am I able to do this? Has anyone done this?

If you and your husband agree, yes, you can do this. If you do not agree, then things get more complicated. Do you both agree on this?

I would talk to your priest about this. He is the one who is in the best position to advise you on what steps to take.

Of course you can. You should schedule an appointment with your priest.
