I guess he ignores what his doctor tells him on that score?
Selective hearing. He had other things to blame it on - blood pressure medication & BPH (before the surgery). My experience with most doctors is that they will throw a hissy fit about smoking, exercise & diet, but gloss over alcohol use. They could do brief intervention, but most do not unless/until the physical consequences become severe - such as liver damage, etc.

I have learned a lot from this discussion about how to apply Catholic teaching on sexuality to my situation. I hope that talking openly can help others with similar situations.

The effects of alcohol on sexual capacity are readily discovered. As u say, he doesn’t want to hear that.

I agree that you should probably seek counsel from a priest. My opinion is this: If a woman had to have a hysterectomy for medical reasons or went through natural menopause, the church does not say that she cannot have intercourse now that she cannot bear children. Your husband underwent a surgery that has resulted in an unintended outcome of sterility. I wouldn’t think that there should be any issue with being intimate in this case. Just my two cents, I could be wrong.

Even if you know that it is very unlikely that your husband will ejacuate, my understanding is that you can still be intimate as long as a physical attempt at unitive sex, according to the Catholic understanding, is made… Your husband should still attempt to “finish” (as best as he is able) within you. There was a time early in our marriage where I sometimes struggled to complete the act, yet as it was my desire to do so there was no sin. To engage in acts where the intention is to stimulate one spouse with no attempt for the man to finish inside his wife is sinful.
