Dear friend,
Whether or not you have children can affect the appropriateness of such an action. Is she still willing to let children be brought up in the Catholic faith?
One may not try to force our religion on another. Perhaps before the wedding your wife sincerely thought that she could become a Catholic, but now has found that she just simply cannot.
On the other hand, if she will not support future children from being brought up in the faith, you could apply for an annulment if you divorce her first. But I suggest that you think this out well before making any decisions.
