I often hear women replacing the word “men” with “all” during the Creed at Mass. Now I know that “men” means “mankind” all with equal dignity before God, but is this going too far?

Yes. The Creed should be stated in its integrity, without replacements or deletions. (I have sometimes heard people simply leave off the word “men” so that the clause becomes “For us and for our salvation.” This too is an unauthorized change.)
