Is it true that a Catholic can't marry a non-Catholic in the Church?

My Girlfriend and I were recently discussing our faith and came across an issue that I don’t fully understand. We are both very firm in our beliefs and our religions- I am Lutheran and she is Catholic, and neither have any intention of “converting” to meet each others needs. She recently mentioned up that she has always dreamed of that big, perfect Catholic wedding, but she can’t won’t be able to have that now because Catholic’s are not allowed to marry non-Catholics in a Catholic Church. Why is that? She wasn’t even sure why.
