My biology book has a section in it that has embryonic stem cells talked about. It is ok to talk and learn about such things as long as we don’t actively take part in destroying embryos.

There is nothing sinful in merely learning about a process or technique. Actually, learning about embryonic stem cells is an obligation. We need to not just form our conscience properly, we need to keep it informed and sharp.
Be careful to find sound information about stem cell research. Seek Catholic sources first.
It can be helpful as part of your own personal apostolate to know what’s involved, so that you can help others and you can defend truth and life.
I went to a great lecture on stem cell research given by a retired Catholic doctor. It was marvelous to learn the terminology, the issues and the real facts. Now I am better able to defend the faith, which is a responsibility of all confirmed Catholics.

Studying virtually any subject is not sinful. It all depends on your reasons for doing this. If your reason is to learn about biology, no sin is there. If your reason is to eventually work in that field, then it would be sinful.
