Is the Eucharist only a symbol?

In a discussion about the Eucharist I was told that it is shear folly because as written in Greek Jesus did not say touto gignetai ( this has become / turned into) but touto esti (this signifies, represents or stands for). How can I refute this point. I don’t know Greek.
