We study the laws of animal sacrifice, but we don’t actually do them.
Rabbis have a more central role then they did back in the day.

The Jewish religion has changed quite a bit, from a highly centralized religion to a very decentralized religion. The sacrifices for the most part are no longer done, although the fasts and feasts still are, in contrast to Judaism between the first two temples when no fasts or feasts were held.
Somewhere along the way Abramic decent started to be considered matralineal instead of patralineal.
There is also the distinction between the Conservative and Liberal sects. Liberal sects tend not to place much emphasis on anything beyond a belief in God and observance of certain feasts while on the Conservative end the Torah is still followed very closely.

A rabbi would usually be the town “google.” If you had a question about the laws of Judaism, you would go to the rabbi. “Can I shovel snow on the sabbath, rabbi?”

But he wasn’t necessarily the person who lead prayers/services. people did pray outside the Temple, even when it was standing. I mean, not everyone could go trapesing off to Jerusalem every day. It would not be necessary to have a rabbi leading or even attending the service.

It is my understanding that a Rabbi was, and is, a scholar. He is the expert. With the destruction of the Temple the priesthood also ceased, and they turned to the scholar to guide them in Scriptures.
