Any help will be most appreciated.

Where there intellectual men of science in the Jewish world in the days of Jesus?

If so, is there evidence of this in the scriptures?

There was no science at the time of Christ. The intellectual pursuit, known as science today was not developed until about 1500 years later.
Jewish intellectuals at that time spent their time reading the Torah and arguing about it’s content…Just as many intellectual Orthodox Jews do today.
This type of intellectual activity begins with young boys studying for their Bar Mitzva, and continues amongst the pious for the rest of their lives.
 
In light of the loss of the library of Alexandria circa 48 B.C.E., I think that question may be hard to answer. Just my opinion, but I find it hard to fathom that there were no Jewish scholars among those work.

Likely under the orders of Julius Caesar, that event was one of the tragedies of human history. We do know that the people of that time were a whole lot smarter than we used to give them credit for.

At the time of Christ, how much influence did the Greek philosophers (scientists) have on the Jews?

The Greeks were scientists or philosophers.

They could see that there was a logos of the cosmos.
