In Genesis 1:26

“And God said, “Let us make man in our image, after our likeness, and they shall rule over the fish of the sea and over the fowl of the heaven and over the animals and over all the earth and over all the creeping things that creep upon the earth.””

What does Judaism explain about this verse, in that God refered to Himself as “us” and “our”?

Some people interpret it as simply being the “royal we”. I’m not sure if that would be the unified interpretation for all Judaism, but that’s one interpretation I’ve heard.
