Why do the priests and deacon kiss the altar during Mass?

The altar represents the Cross of Christ, where the Sacrifice takes place. Traditionally they kissed the altar stone which contained a relic. Some main altars today do not have relics or altar stones, although Canon Law indicates that it is a custom that should be retained if possible.
