Just from doing a quick Google search, I have discovered that there have been a number of miraculous healings of those who have received the Last Rites of the Catholic Church. Can anyone give me a brief list of those that have been examined and are well documentad as genuine miraculous healings?

i can`t answer your question, but the Epistle of James confirms the chance of miraculous recovery:
Is any among you sick? Let him call for the elders of the Church, and let them pray over him, anointing him with oil in the name of the Lord; and the prayer of faith will save the sick man, and the Lord will raise him up… James 4:14,15. RSV [The Good News Bible says: “…the Lord will restore him to health.”]

That is exactly why I ask this question. One anti-Catholic argument is that it is unscriptural, because Last Rites is for spiritual healing, rather than physical healing. My counter is that no direct claim for physical healing is made, because of the possibility of disappointment and lost faith if physical healing does not occur. However, on some occasions, physical healing does occur.
 
I think I have the answer to that. Intercession through the saints provides healing. This is one place where tradition supplements scripture.
