I’ve read plenty of creation science books over the years, seen some of their videos, and printed out plenty of their online material. What I’ve concluded is that
when they attempt to do science, it is very poor science or simply wrong science (e.g. misunderstanding of evolution, etc). When mainstream science (e.g. geology, biology, paleontology, etc) contradicts their interpretation of Genesis, their fallback is always God did it, or God made it look that way (e.g. age of earth is classic example), something that is non-testable and non-falsifiable and therefore not science.
Now here are some paragraphs you should consider, they were quoted by Judge Overton in the landmark
"Arkansas Creationist Trial" (1981-82) where the creationists had their time in court for “balanced treatment.” Sorry but creation science was decided not to be science 25 years ago.
“Creation. By creation we mean the bringing into being by a supernatural Creator of the basic kinds of plants and animals by the process of sudden, or fiat, creation…
We do not know how the Creator created, what processes He used, for He used processes which are not now operating anywhere in the natural universe. This is why we refer to creation as Special Creation.
We cannot discover by scientific investigation anything about the creative processes used by the Creator.” (Gish, Evolution: The Fossils Say No!, page 40, emphasis added)
“Stephen Jay Gould states that creationists claim creation is a scientific theory.
This is a false accusation. Creationists have repeatedly stated that neither creation nor evolution is a scientific theory (and each is equally religious).” (Gish, letter to editor of Discover magazine, July 1981, emphasis added)

Henry Morris and Duane Gish are the modern founders of “creation science” (with books titled
Scientific Creationism) and they flat out say creation science is not science. Henry Morris has stated many times “the Bible is a book of science” and that is also classic “scientific creationism.”
In direct opposition to “creation science” John Paul II has written:
“Cosmogony and cosmology have always aroused great interest among peoples and religions. The Bible itself speaks to us of the origin of the universe and its make-up, not in order to provide us with a scientific treatise, but in order to state the correct relationships of man with God and with the universe. Sacred Scripture wishes simply to declare that the world was created by God, and in order to teach this truth it expresses itself in the terms of the cosmology in use at the time of the writer. The Sacred Book likewise wishes to tell men that the world was not created as the seat of the gods, as was taught by other cosmogonies and cosmologies, but was rather created for the service of man and the glory of God. Any other teaching about the origin and make-up of the universe is alien to the intentions of the Bible, which does not wish to teach how heaven was made but how one goes to heaven.” (Pope John Paul II, 10/3/1981 to the Pontifical Academy of Sciences,
