I hear this phrase often, " the liturgy" or " the liturgy of the Mass". I don’t think I understand this, please explain.

liturgy means literally work of the people, the public prayer and worship of the Church. Mass is liturgy, the Eucharist. Rites for sacraments are liturgy, liturgy of the hours – psalms, readings and prayers at set hours through the day – is liturgy. there are many other prayers that are good and beneficial which are essentially private, even when a group of people gather to pray them, such as the rosary, so they are not liturgy.
liturgy since it is public prayer (even when prayed by one person, such as the liturgy of the hours) must be done according to recognized norms, standards and rules called “rubrics” (Latin for red, because in liturgical books the rules are printed in red, and the actual prayers are in black). that is so obviously everyone can be “on the same page”. so there are books that tell exactly how Mass, sacraments, LOTH and all rites are to be done, the sacred words and actions, the material objects used, and the proper disposition of the celebrant and participants.
