that doesn’t include onions. I don’t like onions, and the feeling is mutual–they don’t agree with me. I’d like to make a dressing this year that’s a step above the boxed mixes. Any suggestions? Oh, and no bell peppers, please. They give me bad headaches.

If you can handle onion powder for the flavor, I have one for you. It’s a traditional cornbread dressing.

Or, my MIL makes a really good Louisiana rice dressing that I could probably get the recipe for. Let me know.

How do you feel about fruit? My mom made a really good stuffing using spicy sausage, sage, apples and fresh cranberries. It was really good, but my stepdad disapproved it for future use because it was too different. Also, you could consider using leeks instead of onion.

I make a few different stuffings. For my basic recipe, I saute onions, celery and garlic in butter, season with salt, pepper, parsley, sage, rosemary & thyme, add 32 oz of chicken broth after the onions brown, then pour it over stale bread that I’ve torn up in a large mixing bowl. I’m guessing you could remove the onions or replace them with bell peppers and/or shallots if you can handle those.

My other recipes are basically a variation of that, adding in cranberries, oysters, apples, sausage, etc.

I don’t like onions either. I just leave onions out of recipes that call for them and have never had a problem.

A lot of stuffing recipes leave out onions. Diced apple, sausage, oyster dressings are great.

I always roast my turkey with onions, celery, and carrots, however, as it makes a delicious broth for gravy.

If you don’t like them, leave them out.

If they don’t like you, either use onion powder or use onions to make the stock you’ll use to make the dressing.

If some like them and you can’t eat them, you can roast them with the turkey or on top of the dressing in big chunks that can impart their flavor on the dressing and then get picked off.

If a lot of you don’t like the flavor and a lot of you do, consider an onion side-dish. If there are enough of you, just bake two kinds in separate dishes.

I have also had guests who could not have some ingredient of the dressing for whom I made a personal portion with the offending ingredient left out. Since dressing is basically a bread pudding with savory ingredients added to suit as the liquid or as chopped additions, it isn’t at all hard to do.

My mom made pepperidge farm stuffing. The mix comes in a bag and you make your own bread crumbs to go with. 👍

This is a good idea!

Plus allrecipes has people put ratings of each recipe so you can gather an idea how good something will be based on the reviews.

I think the comments are the most useful part of the reviews. It explains why people liked or didn’t like a recipe, plus there are almost always people posting variations and how those worked out.

Definitely check out Food Network and Epicurious, too.

Oh, and if you can’t have some ingredient or other there is a good chance there is a food blogger out there in the same boat. You’d be surprised what you might find.
