Looking for computer curriculum

I will be teaching a computer class to grades 4-8 at a local Catholic school. The main topics include the Microsoft Office applications such as Word, Excel and PowerPoint.

Does anyone know of a curriculum that I could use to get ideas? I have looked at what is available on the internet but have not found more than 1 or 2 days of material.

I’d also like to work in some ideas for projects that reflect our values as Catholic Christians. Any suggestions are appreciated. For example, having the students use Word to write a proper letter to local charities thanking them for their hard work and self sacrifice.
 
The college level books I had for MS Office were very very basic and lessons in them could very well be applied to grade school students. I believe that this is what my kids computer teacher did too… along with assigning research so they knew how to surf the internet constructively and I think 5th graders got to build a computer… so they learned hardware. All grades had to spend some time using a typing program and the older kids had to also develop websites. The younger kids mostly did familiarity things and accelerated reader tests and stuff like that.
