Does anyone here know of some good videos or articles on what led up to the Schism (maybe even starting with how the distinction between Eastern and Western Christianity came about) and how it exactly went down?

I don’t. But I do know that you can look at the First Council of Constantinople (which was a local council), specifically Canon III not accepted by Rome later, Council of Chalcedon (451 A.D.) preceeded by the filioque dogma in 447 A.D., the conflict between Justinian I (reign 527-565 A.D.) at the time of Pope Vigilius (pope 527-555 A.D.), and later conflict of Patriarch Photius (partiarch 858 to 867 and 877 to 886 A.D.) and the dispute over the Bulgarian jurisdiction. Rome was removed from the diptychs several times over the years.
