Lord's Supper on Sunday only blindspot

I have a question for Christians that only have the Eucharist, or Lord’s Supper on Sunday as a rule. I recently learned the reasoning behind the church of Christ denomination’s perspective (which my husband grew up in but left). The church of Christ only allows the Lord’s Supper on Sundays because they use a method called “CENI” to interpret the bible and they claim there is no scriptural proof of the Lord’s Supper being on any other day. The only problem with this is that Jesus himself instituted the Eucharist on a Thursday. This came up in conversation as my husband is reading Lenten reflectons and he was really surprised that he had overlooked this blind spot while growing up. He also thought it was funny how adament the elders in his church had been about allowing the Lord’s Supper ONLY on Sunday, never at weddings, etc…only to read the bible for himself finally (without constant oversight and fear of elders) and see Jesus’ own words instituting the Lord’s Supper on a Thursday.
So I am curious for Christians who feel the Lord’s Supper is only to take place on Sunday, and those who don’t - why and why not?
 
May I ask that you partake of the Lord’s supper on any day of the week because Jesus instituted how to take the Lord’s supper, in remembrance of him fulfilling the Old Testament, starting the New Testament Church, and dying for remission of man’s sins, on a Thursday?

I may be playing a bit of devil’s advocate, a fellow Catholic?😃
