Does anyone have any links to Church documents or articles on the proper methods for marrying someone who is a non-Catholic/non-Christian?

The first step will be to make an appointment with the priest because the marriage preparation process is diocese-specific and the priest will handle the process for obtaining a dispensation to marry a non-Catholic.

That said, mixed marriage is an unwise endeavor, and anyone contemplating it should think twice about entering into such a marriage.

The relevant sources would be:

Canon Law

the Encyclical On Mixed Marriage

The Encyclical vatican.va/holy_father/pius_xi/encyclicals/documents/hf_p-xi_enc_31121930_casti-connubii_en.html

and an article from Our Sunday Visitor on mixed marriage
