Mary is perfect?

Hi, I am trying to help a Protestant learn more about the Catholic Church. He has a problem with Mary being considered perfect throughout her life. He quotes scripture saying “all men fall short of perfection. No man, not one.” this is a paraphrase. Please point me to an article or give a description for him/me.
Also, he has a problem with the Catholic Church moving the Sabath from Sat to Sunday. Supposedly it is forbidden in the Scriptures. Please help. Thanks, Peter
