Which is appropriate to the Mexican culture. To my knowledge the Mariachi Mass is only on Saturday vigil. Otherwise, to each their own.

Not necessarily. I do not want to derail this thread, but, Mariachis are more along the line of entertainment rather than the sacred. The musical genre is not appropriate for the solemnity and dignity of the Holy Sacrifice of the Mass. They would be ideal, however, for a reception after the Mass.
Now, regarding the OP’s follow-up issue, would it be possible for your husband to spare you for that hour on Saturday evening. Let me give you a secular, selfish example. My father knows that I love to shop, especially when I am in San Antonio. I will accompany him to get our Jeep serviced, but, the trade-off is for him to let me spend some time doing retail therapy either at La Cantera (which is close to where you will be) or North Star Mall.
I realize that in your case this is different and that this is difficult, but, San Antonio has a plethora of Catholic churches. The link that I posted can show you where else you can go on Saturday evening. Were you going to a place that has a scant number of parishes, I could understand, but, as I see it, were I in your shoes, I would make every effort to fulfill my obligation, as the conference you are attending has nothing to do with the Church. I realize that you are doing this as a favor to your inlaws, but, your oglibation to God comes first.
Please do not think that I am sounding harsh. However, this is very important. Maybe you can strike some sort of compromise. There is also a church, St. Joseph’s, next to Dillard’s (right by the Alamo). Perhaps while you are at Mass, your husband can walk around the River Center Mall (the mall hugs the church). After Mass, you can meet up and dine at the River Walk. You can get to St. Joseph’s by way of IH-10 and you can park at the River Center for a nominal fee.
