If I would like a Mass Intention offered for our Parish Priest, and he is the only priest we have, can he say that Mass? Thanks

Yes he can.
Jesus said, “love others as you love yourself”
There is, within that command, an implicit command to rightly love oneself as loved child of God.
If you request that the priest say a Mass for any person, even if himself, he is obliged to do so.
It is a kind thought and may be encouraging to him.
