Hello!

I was wondering, is there a canon or something that mandates the use of Mass settings that match the liturgical texts in the books? What about for Eastern Catholics? Can you point me to the appropriate regulations or just post them on here?

Your help is greatly appreciated.

Yes, there is. ***

2003’s Chirograph of the Supreme Pontiff John Paul II for the Centenary of the Motu Proprio (of Pius X) “Tra le Sollecitudini” on Sacred Music* *which says in article 5:
(…) Indeed, liturgical music must meet the specific prerequisites of the Liturgy: full adherence to the text it presents
, synchronization with the time and moment in the Liturgy for which it is intended, appropriately reflecting the gestures proposed by the rite. The various moments in the Liturgy require a musical expression of their own. From time to time this must fittingly bring out the nature proper to a specific rite, now proclaiming God’s marvels, now expressing praise, supplication or even sorrow for the experience of human suffering which, however, faith opens to the prospect of Christian hope.*

It depends on if you are talking about the Mass settings (Holy, Holy, Holy, Great Amen, etc…) the Responsorial Psalm/Alleluia, or the music in general.
