Out of curiosity, is the “Sermon on the Plain” (today’s Gospel) and the “Sermon on the Mount” the same sermon written from different perspectives? Or were they two seperate but very similar sermons?

They are the same sermon on different perspectives. The Haydock Bible Commentary refers to Gospel of Matthew from the Gospel of Luke with the commentary. There is also a cross reference in the Challoner revision

They may or may not be the same sermon. Jesus taught for approximately three years. I would see no reason that He could not have said similar things to different audiences at different times and places.

A good analogy would be our two good (insert tongue in cheek, here) Presidential Candidates in the US. They are traveling from place to place giving basically the same speech, and maybe tweaking it from time to time, although the message is rather consistent (that message being the other guy lies, usually).
Jesus gave his Sermon on Salvation through Galilee and Judea with a similar message that was probably changed a little here and there. Notice, one is “on the Plain” and one is “on the Mount” which would indicate different speeches.
