The General Instruction of the Roman Missal allows for all the propers (Introit, Gradual, Alleluia/Tract, Offertory, and Communio) and all the ordinary (Kyrie, Gloria, Credo, Sanctus, Agnus Dei) to be sung in Gregorian chant using the Graduale Romanum or Graduale Simplex. Further, the “alius cantus aptus” option allows for other Gregorian chant books, such as the Cantus Selecti, to be used as well. So, a schola is allowed to sing all those parts. The dialogues may be sung in Latin as well, though preferably all the assembly should sing.

There is space for you to chant the introit, gradual, alleluia/tract, offeretory, communion, maybe a communion monet, and a recessional piece, if you’d like.

To the OP:

You sound like an awesome guy! I wish we had more church music directors like you!! And something I heartily aggree with you on: Kids can sing chant. I’m also a senior member of a schola formed completely by 3-12 grade kids. The 5th graders and up are already singing introits and offertories from the Graduale Romanum, after less than a year!

Here’s a copy of the propers that we sung recently (We also sung missa jubilate deo, and the Sub Tuum). The latin versions are from the Gradual Romanum, and the english ones from the simple propers project. We used the latin for all but the communion (we didn’t have it learned in time).

It’s not that hard!!
