ill try to make this as simple as possible.
Scenario 1:
My family and I plan to go to Midnight Mass at 12am. Since Christmas falls on a Sunday , this fulfills our Sunday obligation also, correct?
Yes
Scenario 2:
Say my family was to go to a 10pm Mass on Christmas Eve (Saturday). Would this ALSO fulfill our Sunday and Christmas obligation?
Yes
Hence, must we also go to Mass on Sunday?

Any Mass you attend between 4 PM on Dec 24 and 12 midnight on December 25th - so in that entire 32 hour period - will satisfy your obligation for both Christmas and Sunday. ONLY When Dec 25 is on Sunday do you get a two - for - one.
 
It’s the same as going to a Vigil Mass on Saturday evening–it counts toward your Sunday obligation.
 
When Christmas Day falls on a Sunday, it takes precedence over the Sunday Mass and obligation. You attend for Christmas Day, not the Sunday. Attending the Christmas Vigil Mass after sunset on Christmas Eve fulfils the obligation - provided that the Mass said is that of the Christmas Vigil and not that of 24th December.

Life becomes more complicated when Christmas Day falls on a Monday. The Vigil Mass can fulfil the Christmas obligation (if the Vigil Mass is said) OR the Sunday obligation (any Mass on Sunday counts) - but not both. I’ve always thought that the priest should introduce than Mass by wishing a Happy Christmas to those attending the vigil and a Happy Christmas tomorrow to those attending for the fourth Sunday in Advent.

There’s one celebration only: the Nativity of the Lord. There’s one obligation only. That obligation can be fulfilled at any time on 25th December and on the evening of 24th December.

  2. Sun (day)
  3. Sun (vigil)
  4. Mon (day)
  5. Mon (vigil)
Any combination of 1, 2, 3 with 3, 4, 5, but it must be twice.

Same pattern works for Immaculate Conception on a Saturday, but Fri (vigil) … Sun (vigil).
