My parish priest said he’d only ever celebrated the Midnight Office once, as part of a youth retreat for high school kids. Has anyone ever been to a service of the Midnight Office either at a parish or monastery? What was it like? Thanks!

The monks of HRM pray the midnight office everyday, I have been able to attend a few times while making retreats there. It is a very prayerful service prayed in near darkness. If I remember correctly it includes Psalm 118 in its entirety (long). The theme of the service is a remembrance of our death.
 
What is the prayer normally associated with that office? Like how O Joyful light is associated with vespers?

Most likely the chanting of Psalm 118 on weekdays. The “prayer of the Midnight Office” is the same Prayer of the Hours used at other services.

The translation at stjonah.org is as good as any other you’d find.

In the current practice of the several Greek monasteries I’ve visited, the midnight office preceeds Orthros. When combined with Divine Liturgy, this becomes about a four hour service (longer if you add the 1st and 3rd hours), and begins between 1am and 4:30 depending on the monastery, with the most common time being 3:30 and 4:30.

And yes, the main portion of the weekday service is Psalm 118. It’s ommitted Saturday and Sunday because, among other reasons, Psalm 118 is said during Orthros in the full (2 hour) service. In either practice, it’s usually intoned by a psalmist/reader by minimal candlelight, with the priest giving the blessings at a few appropriate times (often in the nave of the church).
