Why can’t apologists or priests, through our Lord make the lame walk, the blind see or cure the sick? I didn’t have an answer. Are our prayers or faith insufficient?

Not really, for Jesus said if our faith is as tiny as a mustard, we will be able to move the mountain. He mentioned that the problem was with their unbelief. We just don’t expect that the lame will walk or the blind will see (through our prayers.)

I have seen true healings a number of times, but never the blind seeing, or the dead raised.
 
I have read enough lives of the saints to realize one thing they have in common: the faithless never received any miracles. As for the faithful who are lame or blind, assuming they have great faith, it must be God’s plan and will. This is why we must pray ‘grant us what you will, as much as you will, when you will’.
 
  1. You are aware that miracles are being documented all the time by Church officials in canonization cases, right? These haven’t stopped occurring.
  2. The miracles recorded in scripture are usually for a very specific purpose that often isn’t directly related to the individual’s illness, but because Jesus or the Apostles were bringing about an even greater good - giving an entire town cause to believe, for instance.
 
To me the greatest miracles are miracles of conversion by the grace of God.
 
In the parable of the prodigal son who returned home sorrowful, his father celebrated because he said his son had been dead and came back to life again…

And when a non-believer accepts Christ, the once blind person sees.

They sometimes can. Most of the time you just don’t hear about it because Catholicism doesn’t usually publicize such miracles.

Many such miracles are associated with saints or holy places. There are a lot of shrines where you will see things like lots of crutches hanging up. These are left by people who are cured at the shrine or through the intercession of the saint associated with the shrine, etc.

St John of the Cross said that this was because of our need for faith. In the beginning miracles were necessary in order for Jesus to show that as God He has the authority over the world to do these things. Now that His divinity is established it is not as necessary for miracles to occur as they did in the beginning. Now we are called to live by a more pure faith which believes without seeing.
 
Which is one of the lessons we learn from the parable of Lazarus and the rich man. (Luke 16:31)

How do you know that some Miracles are not occurring?

Why this exception? The scripture your cite only speaks of hands, not limbs.
St John Damascene’s right hand was cut off by his Muslim captors, and it was restored after prayer.
 
I was cured when I attended a Christmas Mass. I did not even ask for a cure, but prayed to Jesus that I will bear the pain if only those who suffer more than me will be cured. It has been 2 years, pain never comes back.

It depends which Christian Denomination you attend on what is taught as disciple ship training. And applications of Scripture
 
You state this is fact but the claim is quite dubious as there is only one reference to it from a single source in 723. I can’t find anywhere that the Church recognizes this miracle as authentic. If anyone could supply such confirmation I would appreciate it.

The Church doesn’t make declarations on every miracle as to their authenticity. However, this story has been captured in sacred iconography that has been passed down since his time.

Not even Sacred Sciptures Themselves testifies to Everything that Jesus said or did.
