For dinner tonight, we had slow-roasted oven baked barbecued boneless pork chops.
I told my husband to “rescue”
a package of really thin-cut pork chops that were at a really inexpensive price at one of our local supermarkets. I’m thinking that they were probably at a reduced price because they were so thin cut.
While he was shopping, I was here thinking of how to make the most of them so that when he brought them home, I was ready with a plan of how to cook them.
I let them sit in the sauce at room temp. for awhile, and then let them cook at a low 325 degrees F. for just a rather short period of time. They turned out really tender.
I served them with some Yukon Gold mashed potatoes on the side, and with a lima bean mixed veggie medley and some soft dinner rolls as sides, too.
I’m still having some Caffeine-Free Diet Pepsi to drink.
