Ok, CAFers, I need to pick your collective brains! 
My doctor has told me that heâd like to see me lose about 50 pounds. With DDâs pregnancy, I was borderline gestational-diabetic, and especially given my familyâs history of diabetes, I want to avoid it partly by losing some weight.
Please note that Iâm not asking for medical advice, just meal ideas.
Iâm running into real problems with making balanced and healthy meals, mostly time-related. Iâm the mom of an 8-month old who, like most of that breed, has little patience for mom spending her awake time doing something other than playing/interacting with her. In any case, itâs not safe to cook while a babyâs crawling underfoot.
I want to eat low-but-balanced carb to try to keep my blood sugar in check, but I also need to restrict calories or I donât lose weight. Believe me, I did low-carb for a year and lost all of five pounds. Felt good because of balanced blood sugar, but I need to lose a lot more weight than that. To lose a pound or pound and a half a week, I need to keep my calories to 1200 per day.
A problem I run into is that I get very stressed trying to figure out what I can cook and eat in a short time, donât eat until two in the afternoon, and then my blood sugar is so low that I inhale a bunch of empty carbs, get angry and discouraged (âI fasted all morning just to screw it up like this?!â) and then eat a bad dinner. Not good.
SoâŚwhat to eat, especially for breakfast and lunch, thatâs both low-carb and fairly low-calorie?
I thought that I could keep some hardboiled eggs, carrot and celery sticks, and string cheese in the refrigerator and incorporate them as snacks, plus use the eggs for part of a breakfast and in a lunchtime salad. That frankly sounds pretty boring as a food mainstay, though, soâŚany other ideas?
