New recipe challenge...meatballs

i have a recipe for a meatball that is like this. but use rice. not potato. and wrap the meat in onion to cook in olive oil.

this thread makes me hungry.
 
My meatloaf is basically a meatball recipe (thanks mom!). Must be an Italian thing whatevergirl 😉

I am printing out this thread. Gave me all sorts of new ideas.

One thing I do with meat balls (or meat loaf) is in place of tomato sauce or catsup as a moistener, I use El Pato, a spicy tomato sauce. It comes in regular and also in a jalepeno flavor (the green can). I use this when I’m doing a Mexican style dinner.

I will brown the meatballs then finish cooking them off in a spicy sauce. These are like albondigas (Latino meatballs).
 
Too bad you all don’t live closer to me…you could all take turns cooking your versions of meatballs, and I’d not have to lift a finger. :rolleyes:😃
 
I had to reply to this thread because I’m actually making meatballs tonight! 😉 The meat’s been defrosting in the fridge all day and then I came home and saw this thread lol.

Usually what I do is use ground sirloin, if possible. For 1 lb ground beef I’d add plenty of salt, pepper, oregano, thyme and basil; a few cloves of garlic, minced; 1 small onion, minced; and equal parts bread crumbs and grated parmesan cheese (maybe a cup and a half total).

I personally don’t use eggs in either meatballs or meatloaf. For a binder I’ll use a little of the pasta sauce I’m working with or some tomato paste, or in a pinch a little water mixed with the bread crumbs.

Cook under the BROILER (yes, try it!) for about minutes on each side or until they’re browned and crunchy on the outside, and then continue to simmer in the pasta sauce for however long is necessary, until the sauce and pasta is cooked and the meat is done all the way through.

I’m loving all the rest of the ideas and recipes here! 👍

The meatball dinner may need to be moved up to tomorrow because I can’t wait! I think I’ll be making meatballs all month! 😃

LOL um, sorry about that. Dontcha know you’re supposed to be able to read my mind? 😊

For big meatballs broil for about 5-7 minutes on each side. I would check them after 3-4 minutes though. They don’t necessarily have to be cooked all the way through in the oven, because you can finish that while they simmer in the sauce. Just get the outside nice and browned. Time will vary depending on your broiler, and how far the rack is from the burner, etc.
 
Laughing…I completely forgot that the kids were getting pizza at choir practice last night, so no meatballs got made. We have PTA tonight, so probably no meatballs will be made. I think I am back to the Thursday schedule. However, I really want to make all the non-Italian versions also. The Mexi kind with hot sauce sound GREAT! So the meatballs all month plan is still on! 😃
