I have a friend of mine that is a fallen away Catholic who is attending a well known non-denominational ecclesiastical group.
She has been initiated into the group and is part of the young adult ministry. As a member of that ministry, she has been given a special diet that follows the Mosaic law of the Old Testament.
She and I have talked about it, and I told her that we, as Christians, are not bound by Mosaic Law since Our Lord, Jesus Christ was the ultimate Pascal Sacrifice.
She wants more “solid” (read: Biblical) evidence that Christians are not bound by Mosaic Law.

Well let me try to explain a little bit. Although I defer to people who are a little more knowledgeable in this area. But I can start with what I know. Sorry to hear that your friend is a fallen away Cathoilc. You refer that she has a special diet of the Mosaic law of the OT. What exactly doesn that mean? The way food is prepared, or the types, or whether it’s from idols?

The people of the bible ate the following:
  • Apples * Herbs
  • Apricots * Honey
  • Almonds * Leeks
  • Barley * Melons
  • Bean soup * Nuts
  • Beef and beef stew * Oil
  • Bread * Olives
  • Broth * Onions
  • Cakes * Pomegranates
  • Cucumbers * Poultry
  • Eggs * Quail
  • Figs * Raisins
  • Fish * Sheep
  • Fruit * Spices
  • Garlic * Vinegar
  • Goat’s milk * Wine
  • Grain
  • Grapes

When it came to what Jesus said and did.Remember he, his Mother and the early followers were all devout Jews observing the law. His last supper was the Passover Seder meal. Jesus said it’s not what goes into a person stomach but that makes them unclean, but what comes out .

During the Council of Jerusalem (The 1st church council) some of the Jewish Christians wanted to impose on the new Greek Christian converts the law. But St. Peter had a vision recalling what he saw. " A large sheet being lowered by its four corners from heaven, and it stopped next to me. I looked closely inside and saw domesticated and wild animals, reptiles, and wild birds. Then I heard a voice saying to me, ‘Get up, Peter; kill and eat! But I said, ’ Certainly not Lord! No ritually unclean or defiled food has ever entered my mouth.’ The voice spoked again from heaven, ’ Do not consider anything uncleaned that God has declared clean." Acts 11:5-9

Oh before I forget Jesus said that he came not to abolish the law but to fullfil it. That not even the smallest letter of the law would pass away. He made the law become flesh and blood, not hard like the Tablets of the 10 Commandments.
 
Regarding the food restrictions of the Mosaic Law, Jesus “declared all foods clean.” (Mark 7:18)
