My question is, if a catholic man, and a protestant woman, with one adopted child, separate what sacraments, if any can still be received by the husband? If she divorces him, what options are left to him, other than a lifetime of chastity? Silly sounding questions, I know.

All the sacraments remain open to him with the possible exceptions of holy orders and marriage.

Whether he is free to marry in the future would have to be determined by a Catholic marriage tribunal through the nullity process or another process as circumstances dictate. It would depend on whether his current marriage is valid and sacramental.

Whether he would be a candidate for any Orders would be up to his Ordinary and canon law.

Were Catholic man and Protestant woman married according to the laws of the Church?

Also can you please explain what you mean by “non-conventional marriage”?

a marriage between to baptised (even if one is protestant) concluded in the Church is valid, if the form and intentions are correct. It cannot be undone.

That the children be legitimate or adopted change nothing.

So the only option is case of a divorce is a lifetime of chastity. Eucharist and confession are permits.

It depends if the marriage was valid at first.
