Would this be a valid confession?:

A person goes to confession and is truly sorry for all the mortal sins they are aware of in their life. They are even sorry for the forgotten ones as well…but God knows that there is a hidden mortal sin in the person completely forgot about and if that person were to be reminded of that incident, they would NOT be sorry for it. The person is completely unaware of this hidden sin though.

Would the confession still be valid?

Yes, it would be valid.

If the person were reminded of it and still refused to be sorry for it and confess it, any subsequent confessions would be invalid.

How can God forgive a sin that one would never want to repent of?

God does not judge us on hypothetical acts that would have been done if we were in a given situation. We are judged on our voluntary acts actually done. A hypothetical non contrition is not an act of the will, so our confession is valid
